DoloBeef sources its animals directly from regional farms in the Dolomites region. These farms often have a long tradition and have often been family-owned for over 200 years. On average, the farms keep around 15 dairy cows, which spend their lives on lush pastures throughout the summer. Only in winter, when the weather is bad, do the animals stay in the loose stables.
In the Dolomites, dual-purpose breeds are traditionally kept - animals that are bred for both milk and meat. In contrast to pure meat breeds, these grow slowly and need more time to reach their slaughter weight. This allows the intramuscular fat to develop optimally. This patience results in a particularly flavourful and high-quality meat - the real "gold of the Dolomites".
