Butcher's shop Gruber

A family business with heart and craftsmanship

In 1993, the Gruber family opened their butcher's shop in Ortisei in Val Gardena. At that time, our team consisted of three people: Lorenz Gruber (owner and qualified butcher), his wife Marianne (saleswoman at the meat counter and secretary) and another experienced butcher. Initially, we produced a small selection of sausages, as there was not enough space for other specialities such as bacon, smoked sausages, smoked beef and salami.

Just six months after opening, we strengthened our team with another employee. In order to meet the great demand for speck and other cured products, we built our own production facility on our farm on the beautiful sunny slope of Villanders in 1998. Since 1999, all sausage products, cured products such as speck, smoked sausages, salami, smoked beef and ham have been produced there. Bacon production has increased from 100 to 500 hams per week - proof of the high quality and popularity of our products.

In 2005, we began planning an expansion of the production facility in Villanders, which was realised in 2009/2010. Our family continued to grow: the branch in Merano opened in February 2013, followed by another in Castelrotto in June 2020.

Our family business thrives on craftsmanship and a passion for top quality. We are constantly hungry for new challenges and on the lookout for innovative products. Thanks to our artisanal structure and professional expertise, we are able to cater specifically to the wishes of our customers.

We, Werner and Lorenz, work personally at the counter to listen directly to our customers' feedback - both praise and criticism. For us, quality and tradition always come first.

Milestones in our history:

  • 02.07.1993 - Opening of the butcher's shop with shop of the Gruber family in Ortisei
  • 07.1998 - Construction of the production plant in Villanders
  • 1999 - Start of production of speck and other cured products
  • 2005 - Planning of the expansion of the Villandro production plant
  • 2009-2010 - Planned opening of the expanded production facility
